Ingredients
- All-purpose flour: 3 cups
- Granulated sugar: 1/2 cup
- Active dry yeast: 2 1/4 teaspoons
- Whole milk, warm: 1 cup
- Unsalted butter, melted: 1/4 cup plus 1/2 cup (for filling)
- Large eggs: 2
- Red food coloring (gel preferred): 1 tablespoon
- White vinegar: 1 teaspoon
- Baking soda: 1/2 teaspoon
- Salt: 1 teaspoon
- Brown sugar (for filling): 3/4 cup
- Ground cinnamon (for filling): 2 teaspoons
- Cream cheese, softened (for glaze): 8 ounces
- Powdered sugar (for glaze): 2 cups
- Vanilla extract (for glaze): 1 teaspoon
Instructions
- Activate yeast in warm milk with a pinch of sugar; let stand 5 minutes until foamy.
- In a large bowl, mix flour, remaining sugar, and salt.
- Add melted butter, eggs, red food coloring, vinegar, and baking soda to the yeast mixture. Mix well.
- Combine wet and dry ingredients to form a soft dough. Knead for 5-7 minutes until smooth.
- Place dough in a greased bowl, cover, and let rise in a warm spot for 1 to 1.5 hours, until doubled.
- For the filling, mix softened butter, brown sugar, and cinnamon until spreadable.
- Punch down the risen dough. Roll it out into a large rectangle (about 12×18 inches).
- Spread the filling evenly over the dough, leaving a small border.
- Roll the dough tightly starting from the long edge. Cut into 12 equal rolls.
- Place rolls in a greased 9×13 inch baking pan. Cover and let rise again for 30 minutes.
- Preheat your oven to 375°F (190°C).
- Bake for 20-25 minutes until lightly golden brown.
- While rolls bake, whisk together cream cheese, powdered sugar, and vanilla extract for the glaze. Add a splash of milk if too thick.
- Remove rolls from the oven and immediately spread the cream cheese glaze over the warm rolls.
Notes
- Use high-quality gel food coloring for the deepest red color without thinning the dough.
- For extra tanginess, add 1 teaspoon of buttermilk powder to the dough mix.
- Do not overbake; these rolls are best when soft and slightly underdone in the center.
- If you prefer a thicker glaze, reduce the amount of milk you add.
