  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/4 cup vegetable oil
  • 1/2 cup buttermilk
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon instant coffee granules
  • 1 tablespoon ground coffee (fine grind)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper


Instructions

  1. For the Iced Coffee Shake: Combine the cooled strong coffee, milk, 2 tablespoons sugar, ice cubes, and vanilla extract in a blender. Blend until smooth. Pour into a glass and serve immediately.
  2. For the Coffee Muffins: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners. In a large bowl, whisk together the flour, 1/2 cup sugar, cocoa powder, baking soda, and salt.
  3. In a separate bowl, whisk the egg, oil, and buttermilk. Add the wet ingredients to the dry ingredients and mix until just combined; do not overmix.
  4. Divide the batter evenly among the muffin cups. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean. Let cool before serving.
  5. For the Quick Coffee Cream: Whip the heavy cream until soft peaks form. Gradually beat in the powdered sugar and instant coffee granules until stiff peaks form. Keep refrigerated until ready to use.
  6. For the Simple Coffee Milk: Mix 1/4 cup of hot water with 1 teaspoon of instant coffee granules until dissolved. Stir this mixture into 1 cup of warm milk. Add sweetener to taste.
  7. For the Coffee Meat Rub: Combine the fine ground coffee, smoked paprika, garlic powder, and black pepper in a small bowl. Mix well. Use this mixture to coat steaks or chicken before grilling or searing.

Notes

  • Use espresso instead of brewed coffee for a stronger flavor in the Iced Coffee Shake.
  • If you do not have buttermilk for the muffins, mix 1/2 cup of milk with 1/2 teaspoon of white vinegar and let it sit for five minutes before using.
  • The Coffee Cream is excellent dolloped on fruit or toast.
  • For the meat rub, allow the meat to sit with the rub for at least 30 minutes before cooking for better flavor penetration.
