- 1/4 cup vegetable oil
- 1/2 cup buttermilk
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon instant coffee granules
- 1 tablespoon ground coffee (fine grind)
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
Instructions
- For the Iced Coffee Shake: Combine the cooled strong coffee, milk, 2 tablespoons sugar, ice cubes, and vanilla extract in a blender. Blend until smooth. Pour into a glass and serve immediately.
- For the Coffee Muffins: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners. In a large bowl, whisk together the flour, 1/2 cup sugar, cocoa powder, baking soda, and salt.
- In a separate bowl, whisk the egg, oil, and buttermilk. Add the wet ingredients to the dry ingredients and mix until just combined; do not overmix.
- Divide the batter evenly among the muffin cups. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean. Let cool before serving.
- For the Quick Coffee Cream: Whip the heavy cream until soft peaks form. Gradually beat in the powdered sugar and instant coffee granules until stiff peaks form. Keep refrigerated until ready to use.
- For the Simple Coffee Milk: Mix 1/4 cup of hot water with 1 teaspoon of instant coffee granules until dissolved. Stir this mixture into 1 cup of warm milk. Add sweetener to taste.
- For the Coffee Meat Rub: Combine the fine ground coffee, smoked paprika, garlic powder, and black pepper in a small bowl. Mix well. Use this mixture to coat steaks or chicken before grilling or searing.
Notes
- Use espresso instead of brewed coffee for a stronger flavor in the Iced Coffee Shake.
- If you do not have buttermilk for the muffins, mix 1/2 cup of milk with 1/2 teaspoon of white vinegar and let it sit for five minutes before using.
- The Coffee Cream is excellent dolloped on fruit or toast.
- For the meat rub, allow the meat to sit with the rub for at least 30 minutes before cooking for better flavor penetration.
