Ingredients

  • 1 pound pasta (penne or rotini)
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breast or shrimp, cut into bite-sized pieces
  • 1 teaspoon jerk seasoning (or more, to taste)
  • 1 medium onion, chopped
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish


Instructions

  1. Cook pasta according to package directions until al dente. Drain and set aside.
  2. Season chicken or shrimp with jerk seasoning.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken or shrimp and cook until done. Remove from skillet and set aside.
  4. Add onion and bell peppers to the skillet. Sauté for 5 minutes until slightly tender.
  5. Stir in garlic and cook for 1 minute until fragrant.
  6. Pour in diced tomatoes and heavy cream. Bring to a gentle simmer.
  7. Stir in Parmesan cheese until the sauce is smooth and creamy. Season with salt and pepper.
  8. Return the cooked chicken or shrimp to the skillet. Stir to coat everything in the sauce.
  9. Add the cooked pasta to the skillet. Toss well until the pasta is fully coated.
  10. Serve immediately, garnished with fresh parsley.

Notes

  • You can easily make this vegetarian by omitting the chicken or shrimp and adding mushrooms or black beans.
  • Adjust the amount of jerk seasoning based on how much heat you prefer.
  • For a lighter sauce, substitute half-and-half for heavy cream.
