- 1 pound pasta (penne or rotini)
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breast or shrimp, cut into bite-sized pieces
- 1 teaspoon jerk seasoning (or more, to taste)
- 1 medium onion, chopped
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Cook pasta according to package directions until al dente. Drain and set aside.
- Season chicken or shrimp with jerk seasoning.
- Heat olive oil in a large skillet over medium-high heat. Add chicken or shrimp and cook until done. Remove from skillet and set aside.
- Add onion and bell peppers to the skillet. Sauté for 5 minutes until slightly tender.
- Stir in garlic and cook for 1 minute until fragrant.
- Pour in diced tomatoes and heavy cream. Bring to a gentle simmer.
- Stir in Parmesan cheese until the sauce is smooth and creamy. Season with salt and pepper.
- Return the cooked chicken or shrimp to the skillet. Stir to coat everything in the sauce.
- Add the cooked pasta to the skillet. Toss well until the pasta is fully coated.
- Serve immediately, garnished with fresh parsley.
Notes
- You can easily make this vegetarian by omitting the chicken or shrimp and adding mushrooms or black beans.
- Adjust the amount of jerk seasoning based on how much heat you prefer.
- For a lighter sauce, substitute half-and-half for heavy cream.
