- 1 package instant ramen noodles (flavor packet discarded)
- 2 large eggs
- 2 tablespoons grated Parmesan cheese
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 2 slices bacon or pancetta, diced
- Salt and black pepper to taste
Instructions
- Cook ramen noodles according to package directions, but drain them before they are fully cooked. Set aside.
- In a small bowl, whisk together the eggs and Parmesan cheese. Season with a pinch of black pepper.
- Heat olive oil in a skillet over medium heat. Add the diced bacon or pancetta and cook until crispy.
- Add the minced garlic to the skillet and cook for about 30 seconds until fragrant.
- Add the drained ramen noodles to the skillet with the bacon and garlic.
- Remove the skillet from the heat. Quickly pour the egg and cheese mixture over the hot noodles, tossing constantly to coat. The residual heat will cook the eggs and create a creamy sauce.
- If the sauce is too thick, add a tablespoon or two of the reserved ramen cooking water.
- Season with salt and pepper to taste. Serve immediately.
Notes
- You can add a pinch of red pepper flakes for a little heat.
- For a vegetarian option, omit the bacon and use a bit more olive oil and garlic.
- Ensure you toss the noodles quickly off the heat to prevent the eggs from scrambling.
