- 1 cup Quinoa, cooked
- 1 tbsp Olive Oil
- 1 small Onion, chopped
- 2 cloves Garlic, minced
- 1 cup Mixed Vegetables (peas, carrots, corn)
- 1/2 cup Tofu, crumbled or diced
- 2 tbsp Soy Sauce or Tamari
- 1 tsp Sesame Oil
- 1/4 tsp Ground Ginger
- Salt and Pepper to taste
- 2 Green Onions, sliced for garnish
Instructions
- Cook the quinoa according to package directions. Set aside.
- Heat the olive oil in a large skillet or wok over medium heat.
- Add the chopped onion and sauté until soft, about 3 minutes.
- Add the minced garlic and cook for 1 minute until fragrant.
- Add the mixed vegetables and cook for 4-5 minutes until tender-crisp.
- Add the crumbled tofu to the skillet. Cook for 3-4 minutes, stirring occasionally.
- Stir in the cooked quinoa, soy sauce, sesame oil, and ground ginger. Mix well to combine everything.
- Cook for another 2-3 minutes, allowing the flavors to meld.
- Season with salt and pepper as needed.
- Garnish with sliced green onions before serving.
Notes
- For extra protein, you can add edamame to the vegetables.
- Use tamari instead of soy sauce for a gluten-free option.
- Feel free to substitute your favorite vegetables like mushrooms or bell peppers.
