Ingredients

  • 1 tablespoon olive oil
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup sliced bell peppers (any color)
  • 1/2 cup snap peas
  • 1/2 cup sliced mushrooms
  • 1/4 cup soy sauce
  • 1 tablespoon honey
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • Cooked rice for serving


Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add broccoli, carrots, and bell peppers to the skillet. Stir-fry for 3-4 minutes until slightly tender.
  3. Add snap peas and mushrooms. Continue to stir-fry for another 2-3 minutes.
  4. In a small bowl, whisk together soy sauce, honey, ginger, and garlic.
  5. Pour the sauce over the vegetables in the skillet.
  6. Toss everything to coat the vegetables evenly. Cook for 1-2 minutes until the sauce thickens slightly.
  7. Serve immediately over cooked rice.

  • Feel free to add your favorite protein like chicken, tofu, or shrimp.
  • Adjust the sauce ingredients to your taste. Add a pinch of red pepper flakes for a spicier kick.
