- 1 cup broccoli florets
- 1 cup sliced carrots
- 1 cup sliced bell peppers (any color)
- 1/2 cup snap peas
- 1/2 cup sliced mushrooms
- 1/4 cup soy sauce
- 1 tablespoon honey
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- Cooked rice for serving
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add broccoli, carrots, and bell peppers to the skillet. Stir-fry for 3-4 minutes until slightly tender.
- Add snap peas and mushrooms. Continue to stir-fry for another 2-3 minutes.
- In a small bowl, whisk together soy sauce, honey, ginger, and garlic.
- Pour the sauce over the vegetables in the skillet.
- Toss everything to coat the vegetables evenly. Cook for 1-2 minutes until the sauce thickens slightly.
- Serve immediately over cooked rice.
Notes
- Feel free to add your favorite protein like chicken, tofu, or shrimp.
- Adjust the sauce ingredients to your taste. Add a pinch of red pepper flakes for a spicier kick.
