  • 1 teaspoon ground cumin
  • 8 ounces uncooked pasta (like penne or rotini)
  • 1 cup frozen corn
  • 1 cup shredded Mexican cheese blend
  • 1/2 cup sour cream (for topping)
  • 2 tablespoons chopped fresh cilantro (for garnish)


Instructions

  1. Brown the ground beef with the chopped onion in a large pot or Dutch oven over medium heat. Drain off any excess grease.
  2. Add the minced garlic to the pot and cook for one minute until fragrant.
  3. Pour in the enchilada sauce, diced tomatoes (with juice), beef broth, chili powder, and cumin. Stir well to combine.
  4. Bring the mixture to a boil.
  5. Add the uncooked pasta and frozen corn to the pot. Stir everything so the pasta is submerged.
  6. Reduce the heat to medium-low, cover the pot, and simmer for 12 to 15 minutes, stirring occasionally to prevent sticking, until the pasta is tender and most of the liquid is absorbed.

Notes

  • For chicken, substitute shredded cooked chicken breast for the ground beef. Add it with the broth.
  • If you prefer a slow cooker method, brown the beef separately, then combine all ingredients except the pasta and cheese in the slow cooker. Cook on low for 3-4 hours. Add the pasta for the last 45 minutes of cooking time. Stir in cheese at the end.
