- 1 pound fresh or frozen sour cherries, pitted
- 1/2 cup granulated sugar (adjust to your preference)
- 2 tablespoons fresh lemon juice
- 1/4 cup water
Instructions
- Combine the pitted cherries, sugar, lemon juice, and water in a medium saucepan.
- Bring the mixture to a gentle simmer over medium heat, stirring occasionally.
- Continue to simmer for 10-15 minutes, or until the cherries have softened and the liquid has thickened slightly.
- Remove from heat and let cool. The compote will thicken further as it cools.
- Serve warm or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 5 days.
Notes
- If using frozen cherries, do not thaw them beforehand.
- Adjust the amount of sugar based on the sweetness of your cherries and your personal taste.
- For a thicker compote, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir into the simmering compote during the last few minutes of cooking.
