Description
Prepare a fast and flavorful dinner using chicken breasts and broccoli florets cooked together on one pan with a sweet and savory honey garlic sauce.
Ingredients
Scale
- 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 large head of broccoli, cut into florets
- 2 tablespoons olive oil
- 1/4 cup honey
- 1/4 cup soy sauce (low sodium preferred)
- 2 tablespoons rice vinegar
- 4 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, toss the cut chicken pieces with 1 tablespoon of olive oil, salt, and pepper. Spread the chicken in a single layer on one half of the prepared baking sheet.
- Toss the broccoli florets with the remaining 1 tablespoon of olive oil, salt, and pepper. Spread the broccoli on the other half of the baking sheet.
- Bake the chicken and broccoli for 12 minutes.
- While the chicken and broccoli bake, prepare the sauce. In a small saucepan, whisk together the honey, soy sauce, rice vinegar, minced garlic, ginger, and red pepper flakes (if using). Bring the mixture to a simmer over medium heat.
- In a separate small bowl, mix the cornstarch and water to create a slurry. Whisk the slurry into the simmering sauce. Continue to cook and whisk until the sauce thickens, about 1 minute. Remove from heat.
- Remove the baking sheet from the oven. Pour about two-thirds of the honey garlic sauce over the chicken and toss gently to coat. Leave the broccoli as is for now.
- Return the pan to the oven and bake for another 5 to 8 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C) and the broccoli is tender-crisp.
- Remove the pan from the oven. Drizzle the remaining sauce over the chicken and broccoli before serving.
Notes
- For crispier broccoli, toss it with the sauce only after it comes out of the oven.
- Serve this dish over cooked rice or quinoa to absorb the extra sauce.
- If you do not have fresh ginger, you can substitute with 1/4 teaspoon ground ginger.
