- 1/4 teaspoon ground cloves
- 1 1/2 cups granulated sugar
- 3/4 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 (15 ounce) can pumpkin puree
- 1/2 cup buttermilk
- For the Cream Cheese Glaze:
- 4 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 tablespoon milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 10-cup Bundt pan.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
- In a large bowl, cream together the granulated sugar and softened butter until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the pumpkin puree to the butter mixture, mixing until well combined.
- In a small bowl, whisk together the buttermilk.
- Add the dry ingredients to the wet ingredients alternately with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Pour the batter into the prepared Bundt pan and spread evenly.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- While the cake cools, prepare the glaze: In a medium bowl, beat the softened cream cheese until smooth.
- Add the powdered sugar, milk, and vanilla extract. Beat until the glaze is smooth and creamy.
- Drizzle the glaze over the cooled Bundt cake.
Notes
- For an extra festive touch, you can add chopped pecans or walnuts to the batter.
- Ensure your ingredients are at room temperature for the best cake texture.
- The glaze can be thinned or thickened with a little more milk or powdered sugar, respectively.
