Description
A recipe for a moist quick bread featuring pumpkin, chocolate chips, and a crunchy brown sugar streusel topping.
Ingredients
Scale
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup pumpkin puree (not pumpkin pie mix)
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- For the Streusel: 1/2 cup all-purpose flour
- 1/4 cup packed brown sugar
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 4 tablespoons cold unsalted butter, cut into small pieces
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, whisk together the 1 3/4 cups flour, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.
- In a large bowl, whisk together the granulated sugar, 1/2 cup brown sugar, and vegetable oil until combined.
- Beat in the eggs one at a time. Mix in the pumpkin puree and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
- Gently fold in the chocolate chips.
- Prepare the streusel: In a small bowl, combine the 1/2 cup flour, 1/4 cup brown sugar, 1/4 cup granulated sugar, and 1/2 teaspoon cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Pour the batter into the prepared loaf pan. Sprinkle the streusel topping evenly over the batter.
- Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean. If the top browns too quickly, loosely tent the loaf with aluminum foil for the last 15 minutes.
- Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
- For a nut variation, add 1/2 cup chopped pecans or walnuts to the batter along with the chocolate chips.
- Use dark chocolate chips instead of semi-sweet for a richer flavor profile.
- To ensure a moist loaf, use pure pumpkin puree, not pumpkin pie filling.
- If you prefer a less crunchy streusel, use slightly less butter in the topping mixture.
