- 2 whole wheat tortillas
- 4 large eggs
- 1/4 cup black beans, rinsed and drained
- 1/4 cup corn, fresh or frozen
- 1/4 cup chopped bell peppers (any color)
- 1/4 cup chopped onion
- 1/4 cup shredded cheddar cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Whisk eggs in a bowl with salt and pepper.
- Heat olive oil in a non-stick skillet over medium heat.
- Add bell peppers and onion to the skillet and sauté until softened, about 5 minutes.
- Add corn and black beans to the skillet and cook for another 2 minutes.
- Pour the whisked eggs into the skillet with the vegetables and beans. Cook, stirring occasionally, until the eggs are set.
- Warm the tortillas according to package directions.
- Spoon the egg and vegetable mixture onto the center of each tortilla.
- Sprinkle with shredded cheddar cheese.
- Fold in the sides of the tortillas and then roll them up tightly to form burritos.
- Serve immediately.
