  • 1 pound boneless, skinless chicken breasts, cut into tenders
  • 1 cup crushed pretzels (about 4 ounces)
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil or vegetable oil


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow dish, combine the crushed pretzels, Parmesan cheese, paprika, garlic powder, salt, and pepper.
  3. Place the flour in another shallow dish and the beaten eggs in a third shallow dish.
  4. Dredge each chicken tender first in the flour, shaking off any excess.
  5. Dip the floured tender into the beaten eggs, letting any excess drip off.
  6. Press the egg-coated tender into the pretzel mixture, coating all sides.
  7. Place the coated tenders on the prepared baking sheet.
  8. Drizzle the tenders with olive oil.
  9. Bake for 15-20 minutes, or until the chicken is cooked through and the coating is golden brown and crispy.

Notes

  • For finer pretzel crumbs, place pretzels in a zip-top bag and crush with a rolling pin.
