Instructions
- Season beef cubes generously with salt and pepper.
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the beef in batches, then set aside.
- Add the chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Return the beef to the pot. Add beef broth, diced tomatoes, Worcestershire sauce, thyme, and rosemary.
- Bring the stew to a boil, then reduce heat, cover, and simmer for 1.5 to 2 hours, or until the beef is tender.
- If thickening, whisk together cornstarch and cold water in a small bowl. Stir the mixture into the stew and cook, stirring, until thickened.
- Stir in frozen peas, if using, and cook for a few minutes until heated through.
- Taste and adjust seasoning with salt and pepper.
- Let the stew cool completely. Portion the cooled stew into individual freezer-safe bags or containers. Ensure they are sealed tightly for storage.
- When ready for camping, thaw the stew overnight in the refrigerator or heat directly from frozen over low heat on a camp stove or campfire.
