Description

  • 3 lbs Russet potatoes, peeled and thinly sliced
  • 3 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 1/2 cups Gruyere cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons unsalted butter, softened (for dish)


Instructions

  1. Preheat your oven to 375°F (190°C). Butter a 9×13 inch baking dish generously.
  2. Rub the cut surfaces of the garlic cloves onto the inside of the prepared baking dish for flavor.
  3. In a medium saucepan, gently warm the heavy cream, milk, salt, pepper, and nutmeg. Do not boil.
  4. In a large bowl, toss the sliced potatoes with the minced garlic.
  5. Pour half of the warm cream mixture over the potatoes, stirring gently to coat.
  6. Stir in 1 cup of the Gruyere cheese and all of the Parmesan cheese into the potato mixture.
  7. Transfer the potato mixture to the prepared baking dish, spreading evenly.
  8. Pour the remaining cream mixture evenly over the potatoes.
  9. Top the dish with the remaining 1/2 cup of Gruyere cheese.
  10. Bake for 60 to 75 minutes, or until the potatoes are tender when pierced with a fork and the top is golden brown and bubbly.
  11. Let the potatoes rest for 10 minutes before serving.

Notes

  • Slice potatoes very thinly and uniformly for even cooking. A mandoline slicer works best.
  • If the top browns too quickly, loosely cover the dish with foil for the last 20 minutes of baking.
  • For an extra savory flavor, substitute half of the Gruyere with sharp white cheddar.
  • You can prepare the dish up to the point of baking, cover, and refrigerate for up to 24 hours. Add 10-15 minutes to the baking time if cooking straight from the refrigerator.
