- 3 lb pork loin roast, bone-out
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 cup chicken broth (for pan sauce)
Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- Pat the pork loin dry with paper towels.
- In a small bowl, mix the salt, pepper, garlic powder, and thyme.
- Rub the olive oil all over the pork loin.
- Sprinkle the seasoning mix evenly over the entire roast.
- Place the roast in a roasting pan or oven-safe skillet.
- Roast for 15 minutes at 400 degrees Fahrenheit.
- Reduce the oven temperature to 350 degrees Fahrenheit and continue roasting until the internal temperature reaches 145 degrees Fahrenheit (about 15-20 minutes per pound total cooking time).
- Remove the roast from the oven when it reaches 145 degrees Fahrenheit.
- Tent the roast loosely with foil and let it rest for 10 to 15 minutes before slicing.
- To make the pan sauce, place the roasting pan on the stovetop over medium heat. Scrape up any browned bits from the bottom of the pan.
- Pour in the chicken broth and bring to a simmer, stirring until slightly reduced.
- Slice the pork loin and serve with the pan sauce poured over the top.
Notes
- Use a meat thermometer inserted into the thickest part of the roast, avoiding bone, to check for doneness.
- Resting the meat allows the juices to redistribute, resulting in a more tender slice.
- For extra flavor, you can rub the pork with mustard before applying the dry rub.
