Easy Mini Pizza Muffins for Lunchboxes

Description

Make these simple, cheesy pizza muffins perfect for snacks, parties, or packing in your kid’s lunchbox. They are quick to prepare and freeze well.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg, lightly beaten
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup pizza sauce
  • 1/2 cup mini pepperoni, chopped
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, oregano, and garlic powder.
  3. In a separate bowl, mix the milk, vegetable oil, and egg.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
  5. Gently fold in 3/4 cup of the mozzarella cheese.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Top each muffin with a small spoonful of pizza sauce.
  8. Sprinkle the chopped pepperoni and the remaining 1/4 cup of mozzarella cheese over the sauce.
  9. Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
  10. Sprinkle the tops with Parmesan cheese during the last 2 minutes of baking.
  11. Let the mini pizza muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • These cheesy pizza cupcakes freeze beautifully! Cool them completely, place them in a freezer-safe bag, and freeze for up to three months. Thaw overnight or reheat from frozen at 350 degrees F for about 15 minutes.
  • For a different flavor, try adding finely chopped bell peppers or mushrooms to the batter.
