Instructions
- Preheat your oven to 350°F (175°C). Line a standard 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the 1/2 cup softened butter to the dry ingredients and mix until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the eggs, milk, and 1/2 cup pink champagne. Add the vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
- Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
- Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
- Prepare the frosting: Beat the 1/2 cup softened butter until creamy. Gradually beat in the powdered sugar.
- Add the 1/4 cup pink champagne and optional extract. Beat until the frosting is light and fluffy. Add more powdered sugar or champagne as needed to reach your desired consistency.
- Frost the cooled cupcakes and decorate them as desired for Valentine’s Day.
