- 4 medium zucchini
- 1 cup prepared basil pesto
- 1/4 cup grated Parmesan cheese
- 2 tablespoons pine nuts, toasted
- 1 tablespoon olive oil
- Salt and black pepper to taste
Instructions
- Wash and trim the ends of the zucchini.
- Use a spiralizer or vegetable peeler to create noodles (zoodles) from the zucchini.
- Heat the olive oil in a large skillet over medium heat.
- Add the zucchini noodles to the skillet. Sauté for 2-3 minutes until slightly tender but still crisp. Do not overcook.
- Remove the skillet from the heat.
- Stir in the basil pesto until the noodles are evenly coated.
- Mix in the grated Parmesan cheese.
- Season with salt and pepper to your liking.
- Serve immediately, topped with toasted pine nuts.
Notes
- You can make your own fresh pesto for the best flavor.
- Toasting the pine nuts brings out their nutty taste.
- If you do not have a spiralizer, slice the zucchini very thinly lengthwise.
- For added protein, toss in some grilled chicken or shrimp.
