Description

Create a light and flavorful Italian dinner with these simple Pesto Zucchini Noodles. It is a fresh alternative to traditional pasta that you will love.


Ingredients

Scale
  • 4 medium zucchini
  • 1 cup prepared basil pesto
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons pine nuts, toasted
  • 1 tablespoon olive oil
  • Salt and black pepper to taste


Instructions

  1. Wash and trim the ends of the zucchini.
  2. Use a spiralizer or vegetable peeler to create noodles (zoodles) from the zucchini.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Add the zucchini noodles to the skillet. Sauté for 2-3 minutes until slightly tender but still crisp. Do not overcook.
  5. Remove the skillet from the heat.
  6. Stir in the basil pesto until the noodles are evenly coated.
  7. Mix in the grated Parmesan cheese.
  8. Season with salt and pepper to your liking.
  9. Serve immediately, topped with toasted pine nuts.

Notes

  • You can make your own fresh pesto for the best flavor.
  • Toasting the pine nuts brings out their nutty taste.
  • If you do not have a spiralizer, slice the zucchini very thinly lengthwise.
  • For added protein, toss in some grilled chicken or shrimp.
