Instructions
- Crush the Oreo cookies into fine crumbs using a food processor or by placing them in a plastic bag and crushing with a rolling pin.
- In a medium bowl, combine the Oreo crumbs and softened cream cheese. Mix well until a dough forms.
- Stir in the peppermint extract.
- Roll the mixture into small balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
- Melt the white chocolate chips with the coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
- Dip each Oreo ball into the melted white chocolate, ensuring it is fully coated.
- Place the coated truffles back on the parchment-lined baking sheet.
- If desired, sprinkle with crushed candy canes while the chocolate is still wet.
- Refrigerate for at least 30 minutes, or until the chocolate has set.
