Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time. Stir in the vanilla extract and peppermint extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in the chocolate chips and the 1/2 cup of crushed candy canes.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 9 to 11 minutes, or until the edges are set and lightly golden. The centers should look slightly underdone.
- Remove from the oven. Immediately sprinkle the tops with the remaining 1/4 cup of crushed candy canes.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
