- For Frosting: 1/2 cup unsalted butter, softened; 3 cups powdered sugar; 1/4 cup milk; 1/2 teaspoon peppermint extract; 1-2 drops green food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a large bowl, whisk the melted butter and granulated sugar together until combined.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and peppermint extract.
- Sift the cocoa powder and flour over the wet ingredients. Mix until just combined; do not overmix.
- Fold in the semi-sweet and white chocolate chips.
- Spread the batter evenly into the prepared pan.
- Bake for 25 to 30 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter, for fudgy results.
- Let the brownies cool completely in the pan on a wire rack.
- Prepare the frosting: Beat the softened butter until creamy. Gradually add the powdered sugar, alternating with the milk and peppermint extract. Mix until smooth. Add food coloring if desired.
- Spread the frosting evenly over the cooled brownies.
- Sprinkle the crushed peppermint candies over the frosting before it sets.
- Once the frosting is firm, use the parchment overhang to lift the brownies out and cut them into squares.
Notes
- For extra fudgy brownies, slightly underbake them by about 2 minutes.
- Use high-quality cocoa powder for the best chocolate flavor.
