- 1 box (about 18.3 oz) fudge brownie mix (plus ingredients listed on box, usually eggs, oil, water)
- 1 cup chopped pecans, divided
- 1/2 cup light corn syrup
- 1/2 cup packed light brown sugar
- 1/4 cup (1/2 stick) unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 325 degrees Fahrenheit. Grease and line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
- Prepare the brownie batter according to the box directions, using the specified eggs, oil, and water. Stir in half (1/2 cup) of the chopped pecans into the batter.
- Spread the brownie batter evenly into the prepared pan.
- In a medium bowl, whisk together the corn syrup, brown sugar, melted butter, egg, vanilla extract, and salt until smooth.
- Stir in the remaining 1/2 cup of chopped pecans into the pecan topping mixture.
- Carefully pour the pecan topping mixture over the brownie batter, spreading it gently to cover the surface. Do not stir into the batter.
- Bake for 40 to 50 minutes. The brownies are done when the edges are set and a toothpick inserted near the center comes out with moist crumbs attached, not wet batter. The topping should be bubbly.
- Let the brownies cool completely in the pan on a wire rack, at least 2 hours, before lifting out using the parchment overhang and cutting into squares.
Notes
- For a salted caramel flavor, sprinkle flaky sea salt over the pecan topping immediately after removing the pan from the oven.
- If you prefer a thicker brownie layer, use an 8×8 inch pan, but reduce the baking time by about 10 minutes and check for doneness early.
- Cooling completely is essential for clean cuts. You can chill the bars briefly to speed up the process.
