- 1 (9 inch) pre-made pie crust, baked
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 cups milk
- 3 large egg yolks, lightly beaten
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream, chilled
- 1/4 cup powdered sugar
- 1 cup toasted pecans
Instructions
- In a medium saucepan, whisk together the granulated sugar, cornstarch, and salt.
- Gradually whisk in the milk until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon. Do not boil rapidly.
- Remove the pan from the heat. Whisk a small amount of the hot mixture into the egg yolks.
- Pour the tempered egg yolk mixture back into the saucepan. Cook over low heat, stirring constantly, for 1 minute. Do not boil.
- Remove from heat and stir in the butter and vanilla extract until the butter melts completely.
- Pour the custard filling into the baked pie crust. Press plastic wrap directly onto the surface of the custard to prevent a skin from forming. Chill for at least 2 hours.
- In a separate bowl, beat the heavy whipping cream and powdered sugar until stiff peaks form.
- Spread or pipe the whipped cream over the chilled custard filling.
- Arrange the toasted pecans over the whipped cream topping.
- Chill the pie for at least 1 hour before slicing and serving.
Notes
- To toast pecans, spread them on a baking sheet and bake at 350°F (175°C) for 5-8 minutes, watching closely.
- You can add 4 ounces of softened cream cheese to the warm custard mixture (before adding yolks) for an extra layer of richness.
