- 1 loaf (about 1 pound) day-old bread, cut into 1-inch cubes
- 1 cup chopped pecans, divided
- 1 cup granulated sugar
- 1/2 cup (1 stick) unsalted butter, melted
- 1/2 cup heavy cream
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Butter a 9×13 inch baking dish.
- Spread the bread cubes in a single layer on a baking sheet. Toast in the preheated oven for 10-12 minutes, or until lightly golden. Let cool slightly.
- In a large bowl, combine the toasted bread cubes and 1/2 cup of the chopped pecans.
- In a separate bowl, whisk together the granulated sugar, melted butter, heavy cream, eggs, vanilla extract, cinnamon, nutmeg, and salt until well combined.
- Pour the wet ingredients over the bread and pecan mixture. Gently toss to coat all the bread cubes evenly.
- Pour the mixture into the prepared baking dish. Sprinkle the remaining 1/2 cup of chopped pecans over the top.
- Bake for 40-50 minutes, or until the pudding is set and the top is golden brown. A knife inserted near the center should come out clean.
- Let the bread pudding cool for at least 10 minutes before serving.

- Serve warm with vanilla ice cream or whipped cream for an extra special touch.
- For a richer caramel flavor, you can drizzle a caramel sauce over the pudding before serving.
- If you don’t have day-old bread, you can lightly toast fresh bread cubes in the oven to dry them out.
