- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup creamy peanut butter
- 1 cup peanut butter cups, chopped or whole (for stuffing)
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and peanut butter.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop rounded tablespoons of dough onto the prepared baking sheets.
- If stuffing, press a whole peanut butter cup into the center of each dough ball, or press half a cup into the top of each cookie before baking.
- Bake for 10 to 12 minutes, or until the edges are set and lightly golden.
- Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.

- For an extra rich flavor, use room temperature ingredients.
- Press the dough balls slightly before adding the peanut butter cup topping.
- If the dough is too soft, chill it for 15 minutes before scooping.
- You can use mini peanut butter cups for smaller cookies.
