Description
A delightful poke cake combining the classic flavors of peanut butter and jelly.

- 1 box yellow cake mix
- 3 large eggs
- 1/2 cup vegetable oil
- 1 1/4 cups water
- 1 cup creamy peanut butter
- 1 cup grape jelly
- 1 cup powdered sugar
- 1/4 cup milk
- 1/2 cup chopped peanuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- Prepare cake mix according to package directions using eggs, oil, and water.
- Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cake cool in the pan for 15 minutes.
- While the cake is still warm, use the handle of a wooden spoon to poke holes evenly over the top of the cake.
- In a small saucepan, heat the grape jelly over low heat until melted and pourable.
- Carefully pour the melted jelly over the warm cake, allowing it to seep into the holes.
- In a medium bowl, whisk together the creamy peanut butter, powdered sugar, and milk until smooth and creamy.
- Once the cake has cooled completely, spread the peanut butter frosting over the top.
- Sprinkle with chopped peanuts, if desired.
- Refrigerate for at least 1 hour before serving to allow the jelly and frosting to set.
Notes
- You can use any flavor of jelly you prefer.
- For extra peanut butter flavor, use crunchy peanut butter in the frosting.
- Make sure the cake is warm when you pour the jelly over it so it absorbs better.
