  • 6 cups fresh peaches, sliced
  • 3/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 recipe for pie crust
  • 1 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 cup rolled oats
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into small pieces


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, gently toss the sliced peaches with granulated sugar, 1/4 cup flour, cinnamon, nutmeg, and lemon juice. Let the mixture sit for about 10 minutes.
  3. Pour the peach mixture into the prepared pie crust.
  4. In a separate bowl, combine 1 cup flour, brown sugar, rolled oats, 1/2 teaspoon cinnamon, and salt for the crumb topping.
  5. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  6. Evenly sprinkle the crumb topping over the peach filling.
  7. Place the pie on a baking sheet to catch any drips.
  8. Bake for 45-55 minutes, or until the crust is golden brown and the filling is bubbly.
  9. If the crust begins to brown too quickly, you can loosely tent the pie with foil.
  10. Let the pie cool on a wire rack for at least 2-3 hours before slicing and serving. This allows the filling to set properly.

Notes

  • For an extra touch of flavor, you can add a pinch of cardamom to the peach filling.
  • If your peaches are not very sweet, you can add an extra tablespoon or two of sugar.
