- 1 recipe for pie crust
- 1 cup all-purpose flour
- 1/2 cup packed light brown sugar
- 1/2 cup rolled oats
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, gently toss the sliced peaches with granulated sugar, 1/4 cup flour, cinnamon, nutmeg, and lemon juice. Let the mixture sit for about 10 minutes.
- Pour the peach mixture into the prepared pie crust.
- In a separate bowl, combine 1 cup flour, brown sugar, rolled oats, 1/2 teaspoon cinnamon, and salt for the crumb topping.
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Evenly sprinkle the crumb topping over the peach filling.
- Place the pie on a baking sheet to catch any drips.
- Bake for 45-55 minutes, or until the crust is golden brown and the filling is bubbly.
- If the crust begins to brown too quickly, you can loosely tent the pie with foil.
- Let the pie cool on a wire rack for at least 2-3 hours before slicing and serving. This allows the filling to set properly.

- For an extra touch of flavor, you can add a pinch of cardamom to the peach filling.
