- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, gently toss the sliced peaches with granulated sugar, cornstarch, lemon juice, cinnamon, and nutmeg. Pour this mixture into an 8×8 inch baking dish.
- In a separate bowl, whisk together the flour, brown sugar, chopped pecans, baking powder, and salt for the crust.
- In another small bowl, beat the melted butter, egg, and vanilla extract together.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Spoon this crumble topping evenly over the peach mixture in the baking dish.
- Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbly.

Notes
- Serve warm with vanilla ice cream or whipped cream for an extra treat.
- If using frozen peaches, do not thaw them before using.
- Adjust the sweetness to your preference by adding more or less sugar.
- For a nut-free version, omit the pecans and add an extra 1/4 cup of flour to the crust mixture.
