Description
A simple, refreshing salad combining fresh peaches, tomatoes, mozzarella, and basil, finished with a sweet balsamic reduction.

- 3 ripe peaches, sliced
- 1 pound fresh mozzarella (bocconcini or sliced), drained
- 2 large heirloom tomatoes, sliced
- 1/2 cup fresh basil leaves
- 1/4 cup balsamic vinegar
- 1 tablespoon honey
- Pinch of salt
- Freshly ground black pepper, to taste
Instructions
- Prepare the balsamic glaze: Pour the balsamic vinegar into a small saucepan. Add the honey. Heat over medium-low heat. Simmer gently for 8 to 10 minutes, stirring occasionally, until the vinegar reduces by half and coats the back of a spoon. Remove from heat and let it cool slightly.
- Arrange the ingredients: On a serving platter, alternate slices of peaches, mozzarella, and tomatoes.
- Add basil: Tuck fresh basil leaves between the slices.
- Season: Sprinkle the salad lightly with salt and pepper.
- Serve: Drizzle the cooled balsamic glaze over the salad just before serving.
Notes
- Use firm but ripe peaches for the best texture. Peaches are best when in season, typically mid-summer.
- For an elegant presentation, arrange the ingredients in a circular pattern or stack them vertically.
- If you prefer a thinner dressing, skip the reduction step and simply whisk the balsamic vinegar with a teaspoon of olive oil.
