- 1 pound spaghetti
- 6 slices bacon, chopped
- 2 cloves garlic, minced
- 1 cup frozen peas
- 2 large eggs
- 1/2 cup grated Parmesan cheese, plus more for serving
- 1/4 teaspoon black pepper, plus more for serving
- Salt to taste
Instructions
- Cook spaghetti according to package directions. Reserve about 1 cup of pasta water before draining.
- While pasta cooks, cook chopped bacon in a large skillet over medium heat until crisp. Remove bacon with a slotted spoon and set aside, leaving about 1 tablespoon of bacon fat in the skillet.
- Add minced garlic to the skillet and cook for 30 seconds until fragrant. Add frozen peas and cook for 2-3 minutes until tender.
- In a medium bowl, whisk together eggs, Parmesan cheese, and black pepper.
- Add the drained hot spaghetti and cooked peas to the skillet with the garlic. Toss to combine.
- Remove the skillet from the heat. Quickly pour the egg and cheese mixture over the pasta, tossing continuously to coat. The heat from the pasta will cook the eggs and create a creamy sauce. If the sauce seems too thick, add a little reserved pasta water, a tablespoon at a time, until you reach your desired consistency.
- Stir in the cooked bacon.
- Season with salt and pepper to taste.
- Serve immediately, topped with extra Parmesan cheese and black pepper.
Notes
- For an extra creamy sauce, you can temper the eggs by whisking a little hot pasta water into the egg mixture before adding it to the pasta.
- Feel free to add a pinch of red pepper flakes for a touch of heat.
