Ingredients

  • 2 medium zucchini
  • 1 large egg, lightly beaten
  • 1/4 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup panko breadcrumbs
  • 1/4 teaspoon garlic powder
  • Pinch of salt
  • Pinch of black pepper
  • Cooking spray


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly coat with cooking spray.
  2. Wash and trim the ends of the zucchini. Cut each zucchini lengthwise into spears, about 1/4 to 1/2 inch thick.
  3. Set up a dredging station with three shallow dishes. Place the flour in the first dish.
  4. In the second dish, place the lightly beaten egg.
  5. In the third dish, combine the Parmesan cheese, panko breadcrumbs, garlic powder, salt, and pepper. Mix well.
  6. Take one zucchini spear and dredge it lightly in the flour, shaking off any excess.
  7. Dip the floured spear into the egg mixture, allowing excess to drip off.
  8. Finally, press the spear firmly into the Parmesan-breadcrumb mixture until it is fully coated.
  9. Place the coated spears on the prepared baking sheet in a single layer. Do not overcrowd the pan.
  10. Lightly spray the tops of the fries with cooking spray.
  11. Bake for 15 to 20 minutes, flipping them halfway through, until golden brown and crisp.
  12. Serve immediately for the best texture.

  • For extra crispiness, you can bake them for an additional 2-3 minutes until they reach your desired crunch.
