- 2 medium zucchini
- 1 large egg, lightly beaten
- 1/4 cup all-purpose flour
- 1/2 cup grated Parmesan cheese
- 1/4 cup panko breadcrumbs
- 1/4 teaspoon garlic powder
- Pinch of salt
- Pinch of black pepper
- Cooking spray
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly coat with cooking spray.
- Wash and trim the ends of the zucchini. Cut each zucchini lengthwise into spears, about 1/4 to 1/2 inch thick.
- Set up a dredging station with three shallow dishes. Place the flour in the first dish.
- In the second dish, place the lightly beaten egg.
- In the third dish, combine the Parmesan cheese, panko breadcrumbs, garlic powder, salt, and pepper. Mix well.
- Take one zucchini spear and dredge it lightly in the flour, shaking off any excess.
- Dip the floured spear into the egg mixture, allowing excess to drip off.
- Finally, press the spear firmly into the Parmesan-breadcrumb mixture until it is fully coated.
- Place the coated spears on the prepared baking sheet in a single layer. Do not overcrowd the pan.
- Lightly spray the tops of the fries with cooking spray.
- Bake for 15 to 20 minutes, flipping them halfway through, until golden brown and crisp.
- Serve immediately for the best texture.
Notes
- For extra crispiness, you can bake them for an additional 2-3 minutes until they reach your desired crunch.
- Pair these fries with a simple marinara sauce or a light Greek yogurt dip.
- If your zucchini seems very wet after cutting, gently pat the spears dry with a paper towel before breading.
