Description

  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper for easy cleanup.
  2. In a medium bowl, whisk together the soy sauce, honey, olive oil, minced garlic, and black pepper until combined. This is your glaze.
  3. Add the prepared mushrooms to the bowl. Toss gently until all the mushrooms are evenly coated with the glaze.
  4. Spread the coated mushrooms in a single layer on the prepared baking sheet. Avoid overcrowding the pan; use two sheets if necessary to promote roasting rather than steaming.
  5. Roast for 15 to 20 minutes, stirring halfway through the cooking time. The mushrooms are done when they are tender and the glaze has caramelized around the edges.
  6. Remove from the oven and serve immediately.

Notes

  • For an extra layer of flavor, add 1/2 teaspoon of grated fresh ginger to the glaze mixture.
  • If you prefer a thicker glaze, you can briefly broil the mushrooms for the last 1-2 minutes, watching closely to prevent burning.
