A simple recipe for making crispy, tender Brussels sprouts roasted in the oven and finished with salty Parmesan cheese.

- 1.5 lb Brussels sprouts, trimmed and halved
- 3 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tbsp lemon juice (optional)
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Place the halved Brussels sprouts on a large baking sheet. Do not overcrowd the pan; use two sheets if necessary for best crisping.
- Drizzle the sprouts with olive oil, then toss them with salt, pepper, and minced garlic until evenly coated.
- Spread the sprouts in a single layer on the baking sheet(s).
- Roast for 20 minutes.
- Remove the pan from the oven. Sprinkle the grated Parmesan cheese evenly over the sprouts.
- Return the pan to the oven and roast for another 5 to 10 minutes, or until the sprouts are tender inside and the cheese is melted and lightly browned.
- Remove from the oven. If using, drizzle with lemon juice immediately before serving.
Notes
- For maximum crispiness, ensure the cut sides of the sprouts face down on the baking sheet during the initial roasting period.
- Adding the Parmesan cheese in the last 5 to 10 minutes prevents it from burning before the sprouts are fully cooked.
- If you prefer a stronger garlic flavor, add 1/4 teaspoon of garlic powder with the salt and pepper before roasting.
