- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- Salt and freshly ground black pepper to taste
- 1 cup orzo pasta
- 3 cloves garlic, minced
- 1/2 cup dry white wine (optional)
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 cup sun-dried tomatoes, chopped
- 2 tablespoons chopped fresh basil
- 1 tablespoon chopped fresh parsley
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Season chicken pieces with salt and pepper. Add chicken to the skillet and cook until browned on all sides. Remove chicken and set aside.
- Add orzo and minced garlic to the skillet. Cook for 1-2 minutes until garlic is fragrant.
- If using, pour in white wine and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
- Pour in chicken broth and bring to a boil.
- Reduce heat to medium-low, cover, and simmer for 10 minutes, stirring occasionally, until orzo is almost tender.
- Stir in heavy cream, Parmesan cheese, and sun-dried tomatoes.
- Return the browned chicken to the skillet.
- Continue to simmer, uncovered, for another 5-7 minutes, or until chicken is cooked through and the sauce has thickened.
- Stir in fresh basil and parsley.
- Season with additional salt and pepper if needed. Serve immediately.
Notes
- For a vegetarian option, substitute the chicken with firm tofu or chickpeas.
- Adjust the amount of cream and cheese to your preference for a richer sauce.
- If you don’t have sun-dried tomatoes, roasted red peppers can be used as a substitute.
