  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • Salt and freshly ground black pepper to taste
  • 1 cup orzo pasta
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine (optional)
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh parsley


Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Season chicken pieces with salt and pepper. Add chicken to the skillet and cook until browned on all sides. Remove chicken and set aside.
  3. Add orzo and minced garlic to the skillet. Cook for 1-2 minutes until garlic is fragrant.
  4. If using, pour in white wine and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat to medium-low, cover, and simmer for 10 minutes, stirring occasionally, until orzo is almost tender.
  7. Stir in heavy cream, Parmesan cheese, and sun-dried tomatoes.
  8. Return the browned chicken to the skillet.
  9. Continue to simmer, uncovered, for another 5-7 minutes, or until chicken is cooked through and the sauce has thickened.
  10. Stir in fresh basil and parsley.
  11. Season with additional salt and pepper if needed. Serve immediately.

Notes

  • For a vegetarian option, substitute the chicken with firm tofu or chickpeas.
  • Adjust the amount of cream and cheese to your preference for a richer sauce.
  • If you don’t have sun-dried tomatoes, roasted red peppers can be used as a substitute.
