- 1.5 lbs boneless, skinless chicken thighs
- 1 tbsp olive oil
- 1 small yellow onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
- 1/4 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and black pepper to taste
Instructions
- Season chicken thighs with salt and pepper.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Sear chicken thighs for 3-4 minutes per side until golden brown. Remove chicken from skillet and set aside.
- Add chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
- Stir in heavy cream and chopped sun-dried tomatoes. Bring to a simmer.
- Return chicken thighs to the skillet. Reduce heat to low, cover, and simmer for 15-20 minutes, or until chicken is cooked through.
- Stir in Parmesan cheese until melted and smooth.
- Add spinach and stir until wilted.
- Season with additional salt and pepper if needed.
- Serve immediately.
Notes
- For a different flavor, you can add mushrooms or artichoke hearts.
- Serve over pasta, rice, or with crusty bread.
