Description

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and black pepper to taste


Instructions

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  3. Sear chicken thighs for 3-4 minutes per side until golden brown. Remove chicken from skillet and set aside.
  4. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  5. Stir in minced garlic and cook for 1 minute until fragrant.
  6. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
  7. Stir in heavy cream and chopped sun-dried tomatoes. Bring to a simmer.
  8. Return chicken thighs to the skillet. Reduce heat to low, cover, and simmer for 15-20 minutes, or until chicken is cooked through.
  9. Stir in Parmesan cheese until melted and smooth.
  10. Add spinach and stir until wilted.
  11. Season with additional salt and pepper if needed.
  12. Serve immediately.

Notes

  • For a different flavor, you can add mushrooms or artichoke hearts.
  • Serve over pasta, rice, or with crusty bread.
