  • 2 large shallots, peeled and quartered
  • 3 tablespoons Dijon mustard

  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon, cut into wedges (for serving)


Instructions

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper for easier cleanup.
  2. In a small bowl, whisk together the Dijon mustard, olive oil, honey, thyme, salt, and pepper to create the glaze.
  3. Place the chicken pieces on one side of the prepared baking sheet. Brush half of the Dijon glaze evenly over the chicken.
  4. Place the trimmed green beans and quartered shallots on the other side of the baking sheet. Drizzle the remaining glaze over the vegetables and toss them gently to coat.
  5. Arrange the chicken, green beans, and shallots in a single layer, ensuring they are not overly crowded.
  6. Bake for 20 to 25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) and the green beans are tender-crisp.
  7. Remove from the oven. Serve the chicken and vegetables immediately with fresh lemon wedges.

Notes

  • For crispier green beans, add them to the pan about 10 minutes after the chicken has started roasting.
  • If you prefer thicker chicken pieces, pound them to an even thickness before glazing to promote even cooking.
