- 1 tablespoon olive oil
- 1 pound breakfast sausage, casings removed
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 4 large eggs
- Salt and black pepper to taste
- Optional toppings: shredded cheese, avocado, hot sauce
Instructions
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Add breakfast sausage and cook, breaking it up with a spoon, until browned. Drain off excess grease.
- Add onion and bell peppers to the skillet. Cook until softened, about 5-7 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Make four wells in the sausage and vegetable mixture. Crack an egg into each well.
- Season the eggs with salt and pepper.
- Cover the skillet and cook for 5-8 minutes, or until the egg whites are set and the yolks are cooked to your preference.
- Serve hot, with optional toppings if desired.

- You can substitute any breakfast meat you prefer.
- Feel free to add other vegetables like mushrooms or spinach.
- For a spicier hash, add a pinch of red pepper flakes with the garlic.
