Description
Easy one-bowl zucchini brownies with sea salt and chocolate chunks. They are moist and rich.

- 1 and 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup grated zucchini, excess water squeezed out
- 1/2 cup melted butter or vegetable oil
- 1/2 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chocolate chunks or chips
- Flaky sea salt for sprinkling
Instructions
- Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
- Add the grated zucchini, melted butter or oil, milk, egg, and vanilla extract to the dry ingredients.
- Mix until just combined. Do not overmix.
- Stir in the chocolate chunks.
- Pour the batter into the prepared pan and spread evenly.
- Sprinkle with flaky sea salt.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
- Let cool in the pan before cutting into squares.
Notes
- Make sure to squeeze out excess water from the grated zucchini.
- Do not overmix the batter.
- Adjust baking time based on your oven.
