Description

Easy one-bowl recipe for moist and fudgy chocolate zucchini bread.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups grated zucchini (about 2 medium zucchini)
  • 1 cup chocolate chips (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, salt, and cinnamon.
  3. Add the eggs, vegetable oil, applesauce, and vanilla extract to the dry ingredients. Mix until just combined.
  4. Fold in the grated zucchini and chocolate chips (if using).
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. Slice and serve.

Notes

  • Make sure to squeeze out excess moisture from the grated zucchini.
  • Do not overmix the batter.
  • You can substitute applesauce with yogurt or sour cream.
  • Store the bread in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
