Instructions
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners.
- In a large bowl, combine the flour, sugar, baking soda, and salt.
- Add the mashed bananas, melted butter, egg, and vanilla extract to the dry ingredients.
- Mix everything until just combined. Do not overmix.
- Divide the batter evenly among the prepared muffin cups.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
