Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine the melted butter, rolled oats, flour, brown sugar, cinnamon, and salt. Stir until the mixture is crumbly.
- In a separate large bowl, gently toss the sliced peaches with granulated sugar, cornstarch, lemon juice, and vanilla extract until evenly coated.
- Pour the peach mixture into an 8×8 inch baking dish.
- Crumble the oat mixture evenly over the peaches.
- Bake for 30-40 minutes, or until the topping is golden brown and the peaches are bubbly.
