- 1/2 cup dried blueberries
- 1/4 cup cashew butter or almond butter
- 2 tablespoons chia seeds
- 2 tablespoons lemon zest

- 2 tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Place the rolled oats and almond flour in a food processor. Pulse until the mixture resembles coarse sand.
- Add the dried blueberries, chia seeds, lemon zest, lemon juice, maple syrup, vanilla extract, and salt to the food processor.
- Process the mixture until it starts to come together. Stop and scrape down the sides as needed.
- Add the nut butter. Process again until the mixture forms a sticky dough that holds together when pressed.
- If the mixture is too dry, add 1 teaspoon of water or lemon juice at a time until the desired consistency is reached.
- Roll the dough into small, uniform balls, about 1 inch in diameter.
- Place the energy bites on a parchment-lined plate or tray.
- Refrigerate for at least 30 minutes to firm up before serving.
