Instructions
- Mix graham cracker crumbs, 1/4 cup granulated sugar, and melted butter in a bowl until combined.
- Divide the crumb mixture evenly among 6 small (8-ounce) mason jars, pressing lightly to form the crust layer.
- In a separate bowl, whisk together the sweetened condensed milk, key lime juice, lime zest, and vanilla extract until smooth.
- Pour the lime filling evenly over the crust layer in each jar.
- Refrigerate the jars for at least 4 hours, or until the filling is set.
- Before serving, whip the heavy cream and 2 tablespoons of powdered sugar until stiff peaks form.
- Top each chilled pie jar with a dollop of whipped cream.
Notes
- You can use regular lime juice if key limes are unavailable, but the flavor will be slightly less intense.
- Prepare the jars up to 24 hours ahead of time; keep them refrigerated until ready to serve.
