Instructions

  1. Combine the sliced strawberries, 1/4 cup granulated sugar, and lemon juice in a bowl. Let the strawberries sit for 15 minutes to macerate, releasing juices.
  2. In a separate bowl, beat the softened cream cheese, 1/2 cup powdered sugar, and 1 teaspoon vanilla extract until smooth. Set aside.
  3. In a clean, cold bowl, whip the heavy cream with 1/4 cup granulated sugar and 1 teaspoon vanilla extract until stiff peaks form.
  4. Gently fold about one-third of the whipped cream into the cream cheese mixture until just combined.
  5. To assemble the trifles, take four small jars (about 8-10 ounces each).
  6. Place a layer of broken shortbread pieces at the bottom of each jar.
  7. Spoon a layer of the cream cheese mixture over the cookies.
  8. Add a layer of the macerated strawberries and a small drizzle of the strawberry juice.
  9. Top with a layer of plain whipped cream.
  10. Repeat the layers: cookies, cream cheese mixture, strawberries, and finish with a final dollop of whipped cream on top of each jar.
  11. Chill the trifles for at least 30 minutes before serving.
