Instructions
- Combine the sliced strawberries, 1/4 cup granulated sugar, and lemon juice in a bowl. Let the strawberries sit for 15 minutes to macerate, releasing juices.
- In a separate bowl, beat the softened cream cheese, 1/2 cup powdered sugar, and 1 teaspoon vanilla extract until smooth. Set aside.
- In a clean, cold bowl, whip the heavy cream with 1/4 cup granulated sugar and 1 teaspoon vanilla extract until stiff peaks form.
- Gently fold about one-third of the whipped cream into the cream cheese mixture until just combined.
- To assemble the trifles, take four small jars (about 8-10 ounces each).
- Place a layer of broken shortbread pieces at the bottom of each jar.
- Spoon a layer of the cream cheese mixture over the cookies.
- Add a layer of the macerated strawberries and a small drizzle of the strawberry juice.
- Top with a layer of plain whipped cream.
- Repeat the layers: cookies, cream cheese mixture, strawberries, and finish with a final dollop of whipped cream on top of each jar.
- Chill the trifles for at least 30 minutes before serving.
Notes
- You can substitute shortbread cookies with vanilla wafers or graham crackers for a different texture.
- For make-ahead assembly, layer all components except the final whipped cream topping. Cover and refrigerate for up to 12 hours. Add the final whipped cream just before serving.
