- 1 cup rolled oats
- 1/2 cup creamy peanut butter
- 1/3 cup honey or maple syrup
- 1/4 cup ground flaxseed
- 1/4 cup mini chocolate chips (optional)
- 1 teaspoon vanilla extract
Instructions
- Combine the rolled oats, peanut butter, honey or maple syrup, ground flaxseed, and vanilla extract in a medium bowl.
- If using, stir in the mini chocolate chips.
- Mix all ingredients thoroughly until a uniform, sticky dough forms.
- Cover the bowl and chill the mixture in the refrigerator for at least 30 minutes. This makes rolling easier.
- Scoop out rounded tablespoons of the mixture and roll them between your palms to form balls about 1 inch in diameter.
- Place the finished bites on a plate or baking sheet lined with parchment paper.
- Refrigerate the energy bites for at least 1 hour before serving to firm them up completely.
Notes
- Store the finished energy bites in an airtight container in the refrigerator for up to one week.
- For a vegan option, use maple syrup instead of honey.
- If the mixture seems too dry, add one teaspoon of water or milk until it holds together when squeezed.
