- 1/4 cup fresh lemon juice

- 1/2 cup shredded coconut or finely chopped nuts (for coating, optional)
Instructions
- In a medium bowl, beat the softened cream cheese until smooth.
- Gradually add the powdered sugar to the cream cheese, mixing until fully combined.
- In a separate microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring until smooth.
- Add the melted white chocolate, lemon juice, lemon zest, and vanilla extract to the cream cheese mixture. Mix well until you have a uniform, thick dough.
- Cover the bowl and chill the mixture in the refrigerator for at least 2 hours, or until firm enough to roll.
- Place your coating material (coconut or nuts) on a shallow plate, if using.
- Scoop out small amounts of the chilled mixture (about 1 tablespoon each) and quickly roll them into balls between your palms.
- Roll each truffle ball in the coating material until fully covered, or leave plain.
- Place the finished truffles on a parchment-lined baking sheet.
- Refrigerate the truffles for at least 30 minutes before serving to set completely.
