Description

  • 1 cup powdered sugar, plus more for dusting
  • 1 cup white chocolate chips
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/2 cup shredded coconut or finely chopped nuts (for coating, optional)


Instructions

  1. In a medium bowl, beat the softened cream cheese until smooth.
  2. Gradually add the powdered sugar to the cream cheese, mixing until fully combined.
  3. In a separate microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring until smooth.
  4. Add the melted white chocolate, lemon juice, lemon zest, and vanilla extract to the cream cheese mixture. Mix well until you have a uniform, thick dough.
  5. Cover the bowl and chill the mixture in the refrigerator for at least 2 hours, or until firm enough to roll.
  6. Place your coating material (coconut or nuts) on a shallow plate, if using.
  7. Scoop out small amounts of the chilled mixture (about 1 tablespoon each) and quickly roll them into balls between your palms.
  8. Roll each truffle ball in the coating material until fully covered, or leave plain.
  9. Place the finished truffles on a parchment-lined baking sheet.
