Description

These no-bake gingerbread truffles are a quick and easy holiday treat. They are perfect for Christmas gifts or a festive dessert.


Ingredients

  • 1 cup gingerbread cookie crumbs
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 12 ounces white chocolate, chopped
  • 1 tablespoon coconut oil (optional, for melting chocolate)
  • Crushed gingerbread cookies or sprinkles for coating


Instructions

  1. In a medium bowl, combine the gingerbread cookie crumbs, softened cream cheese, powdered sugar, ground ginger, cinnamon, cloves, and nutmeg. Mix until well combined and a dough forms.
  2. Roll the mixture into small balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
  3. Chill the balls in the refrigerator for at least 30 minutes, or until firm.
  4. Melt the white chocolate. You can do this in a microwave-safe bowl in 30-second intervals, stirring between each, or use a double boiler. Stir in the coconut oil if using to help with melting and consistency.
  5. Dip each chilled truffle into the melted white chocolate, ensuring it is fully coated.
  6. Place the coated truffles back on the parchment-lined baking sheet.
  7. Immediately sprinkle with crushed gingerbread cookies or your desired sprinkles before the chocolate sets.
  8. Refrigerate the truffles for at least 15 minutes to allow the chocolate to harden completely.
  9. Store the truffles in an airtight container in the refrigerator.

Notes

  • For a stronger gingerbread flavor, you can add a tablespoon of molasses to the truffle mixture.
  • Experiment with different coatings like dark chocolate, milk chocolate, or even a dusting of cinnamon sugar.
