Instructions

  1. Preheat your oven to 425°F (220°C). Butter and lightly flour two 6-ounce ramekins.
  2. In a heatproof bowl set over a saucepan of simmering water, melt the butter and chopped chocolate, stirring until smooth. Remove from heat.
  3. In a separate bowl, whisk together the eggs, egg yolks, granulated sugar, and salt until pale and slightly thickened.
  4. Gradually whisk the warm chocolate mixture into the egg mixture until well combined.
  5. Gently fold in the flour until just incorporated. Do not overmix.
  6. Divide the batter evenly between the prepared ramekins.
  7. Place the ramekins on a baking sheet. Bake for 12-14 minutes, or until the edges are set but the center is still soft.
  8. Let the cakes cool in the ramekins for 1 minute. Carefully invert each ramekin onto a serving plate.
  9. Dust with powdered sugar, and serve immediately with fresh berries or vanilla ice cream, if desired.
