- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Set this aside.
- In a large bowl, combine the mashed bananas, granulated sugar, and brown sugar. Mix well.
- Beat in the eggs one at a time, then stir in the oil and vanilla extract until just combined.
- Gently fold the dry ingredients into the wet ingredients until barely mixed. Do not overmix.
- Fold in the squeezed, grated zucchini and any optional additions like chocolate chips.
- Pour the batter into the prepared loaf pan.
- Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
